WW Eggplant Light Patties






Here is the recipe for WW eggplants light cakes, delicious light cakes, are prepared quickly enough and will be perfect to serve as a starter or small evening light dish with a nice salad.






Ingredients for 4 people: - 4 SP / person -

  • 1 eggplant

  • 3 eggs

  • 30 g of flour

  • 30 g grated Parmesan cheese

  • 1 clove of garlic

  • chopped parsley

  • salt pepper

  • 2 tablespoons olive oil

Preparation:

Wash the aubergines and cut into cubes about 1 cm.

In a frying pan heat 1 tablespoon of olive oil and fry the eggplants for about 7 minutes, stirring occasionally.

In a bowl beat the eggs then add the flour, Parmesan, salt, pepper and mix.

Add the chopped garlic, parsley and eggplant pieces and mix.

In a non-stick frying pan, heat the remaining olive oil, then drop spoonfuls of dough and beat lightly. Then cook about 3 to 4 minutes for each side.
