The ideal dish for summer is the salad, fresh and light, it is prepared with varieties of fruits and vegetables that are usually found in this season. We offer avocado salad and quinoa, satiating and light, with few points. The ingredients are for 4 people and the preparation time does not exceed 20 minutes.
Ingredients: 4 parts - 5 SP / part
- 1 ripe avocado
- 60 g of quinoa
- 1 onion
- 50 g of rocket
- 8 cherry tomatoes
- Juice of half a lemon
- 1 tablespoon of olive oil
- Salt and pepper
Preparation:
Cut the diced avocado and tomatoes out of two, then chop the onion.
Cook the quinoa according to the instructions on the package (usually it takes 15 minutes), then drain it, transfer it to a large salad bowl and allow to cool.
Add avocado, tomatoes, onion and quinoa, then salt and pepper, then pour over lemon juice and olive oil.
serve your avocado and quinoa salad immediately or leave it cool. You can also try this tuna rice salad which is also a special summer salad.
