Thermomix Chocolate and Speculoos Mousse

Ingredients:

  • 10 biscuits speculoos

  • 160 g of dark chocolate

  • 50 g of butter

  • 2 egg yolks

  • 5 egg whites

  • 20 g caster sugar

Thermomix preparation:

Put the cookies in the bowl and then put 20 seconds at speed 4. Then set aside.

Put in the thermomix bowl, the chocolate then mix 10 seconds at speed 10.

Add the butter then set 4 minutes 50 ° to speed 2.

On the ring, add the egg yolks and mix for 30 seconds at speed 3.

Pour the mixture into a container and set aside.

Wash and dry the bowl, insert the whisk, then put the egg whites, the sugar and put them in snow for 4 minutes at speed 3.5.
