  • 1 cup plus 2 tablespoons almond flour (divided)
  • 1 cup coconut flour
  • 2 teaspoons fresh lemon zest
  • 1 cup So Nourished powdered erythritol (divided)
  • 4 tablespoons butter (divided)
  • 1/2 cup unsweetened almond milk
  • 1 cup lemon juice
  • 5 larges eggs (whisked well)
  • 3/4 cup toasted coconut flakes
  • 2 teaspoons coconut oil
Instructions
  1. Preheat the oven to 350°F and grease a 9x9-inch baking pan with cooking spray.
  2. Whisk together 1 cup almond flour with the coconut flour, lemon zest, and ¼ cup erythritol until well combined.
  3. Cut in 3 tablespoons butter using a fork until it creates a crumbled mixture.
