Here is the recipe for the zucchini / ham and curry risotto WW, a tasty smooth risotto with a good curry flavor, very easy to cook and ideal to serve with a salad for a light and complete dish.
Ingredients for 4 people: - 8 SP / person -
- 220 g of risotto rice
- 1 shallot
- 4 zucchini
- 150 g diced white ham
- 2 teaspoons of curry
- 750 ml dehydrated vegetable broth
- 1 tablespoon of olive oil
- salt pepper
Preparation:
Peel the shallot and chop it, then wash the zucchini and cut them.
In a casserole, heat the olive oil and fry the shallot for 3 minutes.
Add the zucchini and cook for 5 minutes.
Then add the rice and sweat for 2 minutes.
Add the diced ham, curry, salt, pepper and pour a ladle of hot broth and cook for about 18 minutes, adding a ladle each time the previous one has evaporated.
Check the cooking then serve your light risotto immediately.
