Brioche Salted Croissants with Thermomix






Here is the recipe of salted brioche cakes with Thermomix, a savory croissant in salty version, with a super soft and deliciously scented parmesan crumb, easy to make with thermomix. They can be eaten alone or garnished as sandwiches.






Ingredients:

  • 500 g flour

  • 12 g fresh baker's yeast

  • 2 teaspoons of sugar

  • 1 teaspoon of salt

  • 50 g grated Parmesan cheese

  • 80 ml of sunflower oil

  • 300 ml of milk

  • 1 egg yolk + some milk

  • sesame seeds

Thermomix preparation:

Put the milk, yeast and sugar in the thermomix bowl and set to 37 ° for 3 minutes at speed 2.

Add the flour, grated parmesan, salt and oil and set 8 minutes on the cob.

At the ringtone put the dough in a salad bowl and let rise about 2 hours.

Then degas the dough and divide it into 2 dough pieces.

On a floured work platter, spread out each dough in a rectangle, then cut out 10 to 12 cm triangles.

Shape croissants by rolling the triangle from the base and place on a baking sheet lined with parchment paper.

Cover with a clean cloth and let rise for 40 minutes.

Preheat the oven to 180 ° C then brush the salted croissants with beaten egg yolk with a little milk and sprinkle with sesame seeds.

Bake for about 20 minutes.
