This recipe was born out of my determination to not leave the house when pressed for tortilla chips. I had a stack of sprouted corn tortillas in the fridge and I knew that wickedly delicious and nutritious tortilla chips would soon follow after a few minutes of baking.
Because the fridge is closer than the store, it just seemed like the natural thing to do.
Thus, these crispy, healthy, baked tortilla chips were created.
I’m certain I’m not the first one to create this recipe but when the recipe is 2 ingredients only, there really is no wrong way to make it, is it?
Healthy Homemade Tortilla Chips Baked in the Oven
I realize these are not Whole30, nor Paleo, nor GAPS and most definitely not low carb. But every now and again, we all crave for something crunchy and healthy.
And you know what? When made with sprouted corn tortillas (such as ones from Sprouted for Life brand) these would actually be considered healthy.
I like to use sprouted tortillas for better digestibility and minimal phytic acid. Ezekiel brand is my favorite but I’ve been able to score organic corn tortillas at Costco and they work great too. Although I haven’t tried, I’m sure wheat tortillas would work just fine as well.
Not counting the salt, the two ingredients in this recipe are: sprouted tortillas and oil. It doesn’t get any simpler than that.
Can tortilla chips be made without oil?
The short answer is no. You need something to keep the chips from drying out too fast in the oven as they bake. The good news is that you can avoid the rancid oils often found in bagged chips.
I use Trader Joe’s avocado oil spray as it’s easy and convenient to use. If you’re not a fan of sprayed oils, lightly brush avocado or coconut oil over the tortilla triangles and you’re good to go.
How to Make Homemade Tortilla Chips – 2 Ingredients!
That’s no typo. Just two ingredients and about 20 minutes is all that’s needed for some healthy tortilla chips. Dip those tortilla chips into the BEST Chunky guacamole or some fresh (or fermented) Pico de Gallo. You can also dig into the 5-minute Blender Salsa when fresh tomatoes are out of season.
Homemade Baked Tortilla Chips
This crazy easy recipe is great to have under your sleeve when you are out of tortilla chips but happen to have some tortillas in the fridge.
- 8 8" gluten free tortillas
- coconut oil spray
- real salt

Pre-heat oven to 350°F. Stack all tortillas together and with a large chef’s knife, cut tortillas into wedges.

Spread the tortilla wedges out on a baking sheet in a single layer. Spray with coconut oil, if using and sprinkle with a little real salt.

Bake tortilla chips for about 7 minutes, watching carefully. I always have the oven light on so I make sure to glance that direction every few minutes.

Use tongs to turn the wedges over and bake for another 6 minutes or until they are golden in color.

Remove from oven and allow to cool. Enjoy with guacamole.
