Here is the recipe for the WW Knacki Sausage Rice Salad, a rich salad made with rice, vegetables, sausages, mozzarella and black olives, easy to prepare and perfect for starters or cold light meals.
Ingredients for 4 people: - 10 SP / person -
- 200 g of rice
- 90 g knacki sausage
- 150 g red and yellow peppers
- 150 g of zucchini
- 100 g cherry tomatoes
- 1 carrot
- 50 g sliced ​​mushrooms
- 50 g black olives
- 60 g light mozzarella
- 1 tablespoon of olive oil
- salt pepper
Preparation:
Cook the rice in boiling salted water as indicated on the package. Then drain it.
Wash the zucchini and peppers and cut into pieces, and cut the carrot julienne.
In a skillet, heat the olive oil and fry the zucchini, mushrooms and peppers for 4 minutes.
Add the carrots, sausage slices, salt and pepper and cook for about 3 minutes.
Meanwhile, cut the cherry tomatoes into quarters, the mozzarella into small cubes and the black olives into slices.
In a large salad bowl put the rice, vegetables and sausages, olives, mozzarella, cherry tomatoes, a pinch of salt and a pinch of pepper and mix everything.
Serve immediately or place in a cool place.
