How to Make Chocolate-Covered Strawberries

How about surprising your Mom with these beautiful and delicious chocolate-covered strawberries this Mother's Day?!?
Because she deserves it

Here is a great idea for a quick and extremely easy dessert. It's simply perfect for any occasion. From a romantic dinner next to a glass of champagne, to a fun kids' party. From a last-minutes dinner for guests, to a breakfast in bed for your amazing mom on Mother's Day (... or ANY day really!)
How can you say no to something that looks this good? Elegant and pretty. Yet, easy and oh-so delicious.
All you need are flavorful strawberries and good quality chocolate. As I say all the time, the result can only be as good as the ingredients you're using. And this time, with so few ingredients, quality is even more important.

Even if this recipe is super simple, there are a few things to keep in mind when preparing these strawberries.
First, make sure to completely dry the strawberries after you wash them. If they are even a little wet, the chocolate will not properly stick.
As you can see from my pictures, I used long stem strawberries. I found them at the farmers' market -  sweet and simply perfect for dipping. The long stem makes it easier to hold and swirl them in the melted chocolate. But if you can't find any strawberries with long stem, regular work just as well. You might get your fingers messy with chocolate ... like that's a big problem, right?!?

One last thing before you rush to the kitchen to try this out. When you melt the chocolate make sure to not overheat it, or it might start to separate and harden. So when warming it up, mix well and wait to see if all the pieces of chocolate are melted, before heating it up some more. Don't be too fast in adding seconds to the microwave, or you might end up ruining some perfectly good chocolate!
Ready to try it out?!

INGREDIENTS:

YIELD: 20 strawberries

    • 20 large strawberries, long stem if possible (about 18 oz, 510 gr)

    • 6 oz (170 gr) chocolate chips, milk or semi-sweet

    • 2 oz (55 gr) of white chocolate chips

    • 1 teaspoon of milk (or butter)

    • 3 tablespoons of shredded coconut (optional)

PREPARATION:

TIME: 30 minutes

Wash the strawberries and dry them thoroughly (if wet, the chocolate will not stick as well).

Melt the chocolate in a double boiler or in the microwave set at high for 45 seconds.

Mix well. If not completely melted, add 15 extra seconds. Do not microwave for too long, or the chocolate will seize - separate and then hardens. Mix until perfectly smooth.

Hold each strawberry by the stem, dip in the chocolate and swirl around until coated evenly on all sides.

Let the extra chocolate drip back in the bowl.

Set the strawberries on a baking sheet (or plate) covered with parchment paper.

If you'd like, roll in coconut flakes immediately, and place on the parchment paper to set.

Place the strawberries in the refrigerator until the chocolate is set. About 15 minutes.

Microwave the white chocolate chips for about 30 seconds.

Mix. If the chocolate doesn't melt, add the teaspoon of milk, and microwave for 10 more seconds if needed.

Mix well until smooth and completely melted.

Drizzle over the dark chocolate using a spoon, fork or piping bag.

Let set in the refrigerator until ready to serve.

    Enjoy :)
