Here is the recipe for aubergine gratin with tomato sauce WW, a tasty gratin light, without bechamel or cream, easy and simple to prepare, to serve as a side dish or a small light dish of the evening.






Ingredients for 4 people: - 3 SP / person -

  • 1 large aubergine

  • 1 clove of garlic

  • 600 g peeled and crushed tomatoes

  • 125 g light mozzarella

  • 1 tablespoon of olive oil

  • 1 tablespoon grated Parmesan cheese

  • chopped basil

  • salt pepper

Preparation:

Start by preparing the tomato sauce, in a saucepan heat the olive oil then fry the garlic for 3 minutes.

Add the crushed tomatoes, a glass of water, salt, pepper and cook for 25 to 30 minutes.

At the end of cooking sprinkle with basil.

Cut the aubergines into thin slices and arrange them on a baking sheet covered with parchment paper and bake for 10 minutes at 200 ° C.

Cut the mozzarella into thin slices.


In a gratin dish spread a spoonful of tomato sauce then put a layer of grilled aubergine, slices of mozzarella and cover with tomato sauce.

Repeat the process until all the ingredients are gone, finish with a layer of tomato sauce and sprinkle with parmesan cheese.
