WW Salmon and Shrimp Rice Salad


WW salmon and shrimp rice salad






This is the recipe for the WW Salmon and Shrimp Rice Salad, a good light and cold salad made with rice, smoked salmon, shrimp, and a yoghurt and mayonnaise sauce, easy and simple to use. prepare for a cold starter or a light meal.






Ingredients for 4 people: - 7 SP / person -

  • 200 g of rice

  • 200 g shrimp

  • 150 g smoked salmon

  • 200 g of peas

  • 120 g plain yoghurt

  • 2 tablespoons lightened mayonnaise

  • zest of 1/2 lemon

  • chopped parsley

  • 2 teaspoons of olive oil

  • salt pepper

Preparation:

Cook the rice in boiling salted water as indicated on the package. Then drain it.

In a skillet, heat the olive oil and fry the peas for about 7 minutes.

Add the shrimp and cook for about 5 minutes.

Then add the smoked salmon and leave for 2 minutes then remove from the heat.

In a bowl put the rice then add the peas, smoked salmon, shrimp, yogurt and mayonnaise and mix well.

Season with pepper and add the lemon zest and chopped parsley and mix well.

Keep cool until ready to serve.
