Kaju Katli | Indian style Cashew Fudge





A popular Indian sweet, Kaju Katli is a addictive fudge made out of cashews. This sweet is always yummy, especially when made at home!





With Diwali just around the corner, it is time to make some tasty sweets for family and friends. And what can be better than Kaju Katli, a sweet that most people devour!!












A family favorite and highly addictive, Kaju Katli is easy to make with just 4 ingredients, a couple of optional toppings and 30 minutes of time! Cashew, sugar and ghee (clarified butter) forms the basis of this sweet. Add in some cardamom powder or saffron to enhance the flavor and you may also top it with edible Silver foil (varakh) to enhance its looks! Here is the simple recipe with few steps.











Ingredients



Cashewnuts 1 cup



Sugar 3/4 cup



Ghee(Clarified butter) 1 tsp



Water 1/8 cup




Optional Ingredients



Saffron strands



Cardamom powder



Edible silver foil (Varakh)











Method



Grind cashewnuts in a food processor or mixer to powder. Do not grind it for a long time because it might give out it's oil and make the mixture mushy. Make a fine powder or keep it little particulate depending on your taste. 


Transfer the mixture to a mixing bowl. Powder the sugar and add it to the cashew powder. Mix well.




In a large heavy bottom pan heat ghee. Once the ghee melts, add the cashew-sugar mixture and mix well. Cook for about 5-6 minutes on slow to medium flame till the mixture becomes crumbly, but does not change color. 


Now make a little well in the middle of the mixture and add water. Add cardamom powder or saffron strands (if desired) to the water and let the water boil. 


Mix the water into the mixture and cook for 7-8 minutes till it comes together as a semi-solid mass. 




Ensure the mixture is not very dry else it will not spread properly. Transfer the mixture to a greased tray and roll it out using a greased rolling pin to about half a centimeter thickness. 


At this stage, apply the silver foil if desired. Let the mixture cool a little. Once cooled, cut it. Generally Kaju Katli is cut into diamonds, but you may choose another shape too!! Enjoy Diwali with home made Kaju Katli :)
