Fall is here! And Celery is at it's best. Bright green color vegetable, that is used in weight-loss diets, where it provides low-calorie dietary fibre bulk. Celery adds a rustic flavor to salads, a deep taste to soups and sauces, and a fresh flavor to other dishes.
This classic Creamy Celery soup is a perfect starter to a winter dinner, served warm with bread or baked garlic croutons; or it can be served as a complete meal by itself. This soup does not have any corn starch to thicken it. I have used half a potato to get the correct consistency of the soup.
Ingredients
Celery sticks, 2 cups diced
Onion 1/2 cup, diced
Garlic, 2-3 cloves minced
Ginger, 1 inch piece, grated
Potato 1/2 cup
Black Pepper, Salt
Water
Butter
Method
In a heavy bottom saucepan sauté garlic and ginger in 1/2 tsp. butter. Add diced onion and sauté with black pepper. Next add the peeled and diced potato and mix well. The potato helps thicken the soup without adding any corn starch! Cover and cook for 3-4 minutes. Once the potato is soft, add diced celery sticks. Add 2 cups water, 1 tsp. salt, mix well and cook till the celery is soft.
Cool the mixture and blend to a smooth paste. Seive the mixture back to the saucepan and bring to a boil. The soup is ready to serve!
