Preparation:
Wash the zucchini and peppers then cut into cubes, peel and chop the onion.
Then cut the chorizo into small cubes.
In a skillet, heat the olive oil and fry the onion for 3 minutes.
Add the zucchini, pepper and chorizo then cook for 10 minutes, salt and pepper.
Beat the eggs in omelette then salt and pepper.
Then add the vegetables to the chorizo and mix well.
