Here is the recipe strawberry thermomix, one of my favorite cakes, a classic strawberry-based sponge cake filled with a cream muslin and seasonal strawberries, easy to make thermomix for a gourmet dessert.






Ingredients:

For the Genoese:

  • 4 eggs

  • 50 g flour

  • 120 g of sugar

  • 50 g cornflour

  • 1 sachet of baking powder

For the muslin cream:

  • 400 g whole milk

  • 4 eggs

  • 50 g cornflour

  • 50 g caster sugar

  • 30 g vanilla sugar

  • 1 teaspoon of strawberry flavor (optional)

  • 200 g of ointment butter

  • 400 g strawberries cut in 2


Pour strawberry jelly:

  • 200 g strawberries

  • 1/2 lemon juice

  • 4 g gelatin leaves

Preparation:

For biscuits:

Insert the whisk into the thermomix bowl then put the eggs and sugar and set 10 minutes at 37 ° speed 3.

Add the flour, cornflour and baking powder and mix for 50 seconds at speed 3.

Pour the mixture into a baking sheet lined with parchment paper and bake for about 15 to 20 minutes.

Remove from the oven and turn out and let cool.

Then cut the sponge cake into two cookies in the shape of your baking circle then set aside.


For the cream:

Put the milk, eggs, sugar, vanilla sugar, strawberry aroma and cornflour in the bowl and set 9 minutes at 90 ° to speed 4.

Transfer the cream into a salad bowl by putting on contact, a food film and place in the refrigerator.

When the cream is completely cold, put it back in the bowl insert the whip and remix 20 seconds at speed 3.

Add the ointment butter and set for 3 minutes at speed 4.


For mounting :

Place your 24 cm pastry ring on the serving platter, and place the rhodoïd strip inside and around the circle for easy demolding.

Place the first sponge cake, then place the cut strawberries in 2 around the biscuit, face cut out.

Put the cream in a pastry bag and garnish the biscuit, starting with the empty spaces between the strawberries.

Place the second sponge cake, press lightly then cover with the rest of the cream then smooth the top with a spatula, and place in the fridge for 2 hours.


For strawberry jelly:

Dip the gelatin sheets in cold water for 10 minutes.

Put the strawberries in the bowl and mix for 20 seconds at speed 8.

Pass the puree in a sieve then a finer texture.

Return the mashed potatoes to the bowl. Add the lemon juice and set for 60 minutes for 60 minutes at speed 1.

At the ringtone add the gelatin then mix 20 seconds at speed 4.

Let cool then gently pour the mirror over the cream and cool for at least 8 hours.

Carefully unmold the strawberry then decorate and serve.
