- 1 pound ground beef (80% lean)
- 1 pound medium stalk celery (diced)
- 1 small yellow onion (diced)
- 2 cloves minced garlic
- 3/4 cup beef broth
- 1/4 cup tomato paste
- 2 tablespoons So Nourished powdered erythritol
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dijon mustard
- salt and pepper
- Cook the beef in a large skillet over medium-high heat until browned, breaking it up with a spoon.
- Stir in the celery, onion, and garlic and cook for 5 to 6 minutes until tender.
- Add the remaining ingredients and stir well to combine.
- Reduce heat and simmer on low for 20 minutes until it starts to thicken.
- Serve the sloppy joes on keto bread or in lettuce cups.
