Ingredients for 12 pancakes: - 2 sp / pancake -
- 180 g flour
- 200 ml skimmed milk
- 2 eggs
- 250 g of zucchini
- 1/2 teaspoon baking powder
- 30 g grated Parmesan cheese
- salt pepper
Preparation:
Wash the zucchini and grate and drain.
In a bowl beat the eggs then add the milk and mix.
Add the flour, parmesan, yeast, salt and pepper and mix again.
Incorporate the courettes and mix well.
Bake the pancakes in a non-stick pan for about 2 to 3 minutes per side.
