- 1 tablespoon olive oil
- 6 bone-in chicken thighs
- 1 cup low carb tomato sauce
- 3 ounces sliced pepperoni
- 1 1/2 cups shredded mozzarella cheese
- salt and pepper
- Preheat the oven to 350°F.
- Heat the oil in a 12-inch cast-iron skillet over medium heat.
- Season the chicken with salt and pepper then add to the skillet.
