Arugula Salad Recipe:
My sister, Alla, got the inspiration from the Arugula Berry Salad at Blaze Pizza (our favorite pizza place) and she re-created it, over and over and over. Arugula Salad has just 5 ingredients, takes no time at all, has wonderful flavor, and always disappears fast.
What is Arugula?
Arugula is a leafy green vegetable known for its fresh, peppery and lightly bitter flavor notes. It has a high nutrient density* similar to broccoli, kale and Brussels sprouts. It’s also an immune boosting food, rich in antioxidants. 1 cup of arugula contains:
- 10% Vitamin A
- 28% Vitamin K
- 4% of your daily Vitamin C, Folate and Calcium
Baby arugula is harvested young and has a more delicate flavor (less bitter). Arugula should be stored in the refrigerator and used within a few days of purchasing. We have found the longer it sits in the refrigerator, the more bitter it becomes.
Can I Substitute Goat Cheese?
Before you substitute, please try the recipe as written. In the right recipe, goat cheese (also known as “Chevre”) offers tangy gourmet flavor with a creamy texture that can’t be beat. We like the Kirkland Signature brand goat cheese from Costco (plain/unflavored). If you aren’t able to find goat cheese, feta would be the next best thing. P.S. If you love goat cheese, our roasted pepper bruschetta is a must try!
How to Make Arugula Salad with Berries:
This salad couldn’t be easier. We suggest leaving the bottle of balsamic glaze next to the salad in case your crew may want a little extra.
- Place baby arugula in a large salad bowl
- Top with sliced strawberries and whole blueberries
- Sprinkle on goat cheese and drizzle with balsamic glaze
The Best Balsamic Glaze:
We love Nonna Pia’s Balsamic Glaze. This is NOT a paid promotion. It really is quite good. I’m careful about recommending a pre-made “dressing” but seriously this one is good. We found it at Fred Meyer and Costco. I equally love their “Classic” and “Strawberry Fig” varieties. The “classic” has just 2 ingredients: Balsamic vinegar of Modena Italy and non GMO sugar.
I contemplated making a homemade balsamic glaze but being honest with myself and you, I wouldn’t spend the time doing that when this store-bought one is so good and inexpensive. 1 bottle lasts a long time (it has concentrated flavor so a little goes a long way), it’s gluten free, delicious, and there’s a funny story about a Natasha on the bottle (not me of course ha ha!).

Place arugula into a large salad bowl. Top with sliced strawberries, whole blueberries and crumbled goat cheese.
Drizzle the top with balsamic glaze, adding it to taste and serve. Do not toss this salad. It serves beautifully just drizzled and left as is.
