I can't believe it's the end of September already. This means shorter days and longer nights are on the way. I really wish this would translate in more time snoozing under the blankets ... but we all know that's not going to happen :(
What it does mean for sure is colder weather, and more chances to turn on the oven to bake something delicious.
Just like this cake.
Now that apples are in season and back in the baking spotlight, let's take advantage of this delicious gift of nature. So, how about a thick slice of this soft and moist cake filled with sweet apple slices, a touch of orange zest and vanilla. No butter for this recipe but yogurt and vegetable oil to keep it extra moist and super soft.
And not just any plain yogurt. Oh no! Today I have something special for you. Something you will want to try (in the cake or just by itself) once you hear about it.

ALOE VERA yogurt by Alove!!!

Now, let's talk cake for a minute.
I used plain original Aloe vera yogurt by Alove and apples. But you're welcome to try out any other flavor combination. How about vanilla yogurt and blueberries, or kiwi yogurt and pears?!? Only your creativity is the limit with this cake!
The recipe is quite fast (ready in about an hour) and simple (you really have to try hard to mess this up). Just follow the simple directions below and you will end up with a delicious homemade dessert that your family will simply love. Perfect for breakfast or brunch, but also as a wholesome snack or guilty pleasure after dinner.
- Here is a video recipe for you. Did you see what I've done here?!? For this recipe I'm using the empty Alove yogurt cup to measure all ingredients! So all you have to do is wipe clean the cup once you pour the yogurt in the bowl, and use it for the rest of the recipe. Quite ingenious, right?! Sometimes I really surprise myself ;) Haha
INGREDIENTS:
YIELD: 9in (23cm) cake - serving 8-10
- 2 cups of plain original Aloe vera yogurt by Alove (6 oz, 170 gr each)
- 3 eggs
- 1 cup* (180 gr) of sugar
- 1 teaspoon of vanilla extract
- 1 cup* (175 ml) of vegetable oil
- 3 cups* (345 gr) of all-purpose flour
- 1/4 teaspoon of salt
- 2 teaspoons of baking powder
- zest of 1 orange
- 1 teaspoon of cinnamon (optional)
- 3 apples
- powdered sugar to decorate
- cup*= use the empty yogurt cup!!
PREPARATION:
TIME: 1 hour
Preheat the oven to 375°F (190°C).
In a large bowl, add the yogurt, eggs, sugar and vanilla extract.
Mix well.
Add the oil while mixing.
Add the flour, baking powder, salt and orange zest. Mix just enough to combine.
Peel two apples and thinly slice. Add to the batter and fold.
Pour the batter in a 9 in oven pan with removable sides if you have it. I covered the bottom with parchment paper, and spray (or grease with butter and flour) the sides.
Peel and slice the last apple, and decorate the top.
Bake at 375°F (190°C) for about 45-50 minutes until golden on top. Test with a toothpick in the middle to see if the cake is completely cooked. Add a few minutes if necessary.
Cool down, remove from the pan and decorate with powdered sugar before serving.
